The last few weeks have been pretty tough around here, with all of the kids getting sick (one right after another) and Tony being out of town for a few days. Thankfully, everyone is feeling better now, and things are getting back to normal. I’m kicking myself for missing last week’s portraits – but honestly, I haven’t even looked at my camera for days. This project is really about me pushing myself to keep on shooting – and giving myself a reason to keep doing so. That being said, here are this week’s portraits. I hope you all had a lovely week! 3. Ava – dressed and ready for kindergarten.

4. Justin – waiting for the bus early in the morning, and apparently, still half asleep.


Blueberry Muffinsfeatured


You guys! I found the most amazing recipe for blueberry muffins. Like EVER. I’ve made them several times now, and my family just loves them! Even Justin, who is definitely not a fan of blueberries, tears these things up! This recipe is super easy – and (in my opinion) doesn’t require any adjustments. Here it is:

Ingredients: *Original recipe makes 8 large muffins

(For the muffins)

1 1/2 cups all-purpose flour  |  3/4 cup white sugar  |  1/2 teaspoon salt  |  2 teaspoons baking powder

1/3 cup vegtable oil  |  1 egg  |  1/3 cup milk  |  1 cup fresh blueberries

 (For the crumb topping)

1/2 cup white sugar  |  1/3 cup all-purpose flour  |  1/4 cup butter, cubed  |  1 1/2 teaspoons ground cinnamon

  1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  4. Bake for 20 to 25 minutes in the preheated oven, or until done.
